Spring Raspberry Salad

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1/2 cup walnuts, coarsely chopped
  • 2 tablespoons sugar
  • 5 ounces mixed salad greens
  • 12 ounces fresh raspberries (2 cups)
  • 1/2 cup red onion, sliced thin (about 1/2 small onion)
  • 1/2 cup dates, chopped
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon dijon mustard
  • salt & freshly ground black pepper
  • 2 ounces goat cheese, crumbled

Recipe

  • 1 heat a small skillet over low heat and cook walnuts and sugar, stirring constantly, until sugar melts and walnuts are coated, about 10 minutes; let cool, break apart, and set aside.
  • 2 meanwhile, in a large bowl, combine salad greens, fresh raspberries, onion, and dates.
  • 3 whisk together olive oil, balsamic vinegar, dijon mustard, salt and pepper to taste.
  • 4 just before serving pour dressing over salad and gently toss; garnish with cheese and walnuts.
