Stuffed Apricot Salad For One

Ingredients

  • Servings: 1
  • 2 -3 fresh apricots, halved and stone removed
  • 1 cup shredded lettuce (or use a lettuce cup)
  • 4 tablespoons low-fat cream cheese
  • 1 teaspoon 2% low-fat milk
  • 2 tablespoons dates, chopped fine

Recipe

  • 1 place the apricot halves on the lettuce on a salad plate.
  • 2 mash the cheese and milk.
  • 3 spoon into the centers of the apricots.
  • 4 sprinkle with the dates and serve.
