- 2 -3 fresh apricots, halved and stone removed
- 1 cup shredded lettuce (or use a lettuce cup)
- 4 tablespoons low-fat cream cheese
- 1 teaspoon 2% low-fat milk
- 2 tablespoons dates, chopped fine
Recipe
- 1 place the apricot halves on the lettuce on a salad plate.
- 2 mash the cheese and milk.
- 3 spoon into the centers of the apricots.
- 4 sprinkle with the dates and serve.
