Mom Mom's Potato Salad

Ingredients

  • Servings: 12
  • 5 lbs golden yukon gold potatoes
  • 1/2 lb bacon
  • 1 large yellow onion, dices
  • 1/2 cup spanish olives, sliced
  • 3 large sliced celery ribs
  • 8 large eggs
  • 1 1/2 cups mayonnaise
  • 2 tablespoons of minced garlic
  • 1 teaspoon salt
  • 2 teaspoons black fresh coarse ground black pepper
  • 1 tablespoon celery seed
  • 1 teaspoon crushed red pepper flakes

Recipe

  • 1 peel and cook potatoes, do not rinse, then cut into cubes.
  • 2 fry bacon to crisp and chop in small pieces - reserve 2 tbsp of bacon drippings.
  • 3 hard boil eggs, then peel and dice.
  • 4 chop, dice, and slice vegetables.
  • 5 in a very large bowl, add potatoes, bacon, and eggs while they are still warm.
  • 6 add in onions then all of the other ingredients.
  • 7 stir while still warm, add mayo if needed.
  • 8 cover and refrigerate for at least an hour prior to serving.
  • 9 enjoy!
