Mom Mom's Potato Salad

Ingredients

- 5 lbs golden yukon gold potatoes
- 1/2 lb bacon
- 1 large yellow onion, dices
- 1/2 cup spanish olives, sliced
- 3 large sliced celery ribs
- 8 large eggs
- 1 1/2 cups mayonnaise
- 2 tablespoons of minced garlic
- 1 teaspoon salt
- 2 teaspoons black fresh coarse ground black pepper
- 1 tablespoon celery seed
- 1 teaspoon crushed red pepper flakes
Recipe
- 1 peel and cook potatoes, do not rinse, then cut into cubes.
- 2 fry bacon to crisp and chop in small pieces - reserve 2 tbsp of bacon drippings.
- 3 hard boil eggs, then peel and dice.
- 4 chop, dice, and slice vegetables.
- 5 in a very large bowl, add potatoes, bacon, and eggs while they are still warm.
- 6 add in onions then all of the other ingredients.
- 7 stir while still warm, add mayo if needed.
- 8 cover and refrigerate for at least an hour prior to serving.
