Potato Salad Extraordinaire!

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 12
  • 1/2 lb bacon
  • 1/2 cup sugar
  • 2 tablespoons flour
  • 2 eggs
  • 1/4 cup vinegar
  • 1 cup water
  • 1/2 cup salad dressing
  • 2 tablespoons yellow mustard
  • 10 medium potatoes
  • 1/2 cup celery, diced
  • 5 eggs, hard boiled
  • 1/4 cup onion, diced
  • salt and pepper

Recipe

  • 1 cook potatoes with skin on and set aside to cool.
  • 2 cut bacon into 1/2 inch strips. fry lightly, drain.
  • 3 mix sugar and flour, add eggs and beat to smooth paste.
  • 4 slowly stir in vinegar and water.
  • 5 pour into pan with bacon and cook until thickened.
  • 6 cool thoroughly; add salad dressing, stirring until well blended.
  • 7 peel cold potatoes and dice them into a large bowl with the hard boiled eggs chopped, celery, and onion.
  • 8 add dressing, mustard, salt and pepper to taste.
