Potato Salad Extraordinaire!

Ingredients
- Servings: 12
- 1/2 lb bacon
- 1/2 cup sugar
- 2 tablespoons flour
- 2 eggs
- 1/4 cup vinegar
- 1 cup water
- 1/2 cup salad dressing
- 2 tablespoons yellow mustard
- 10 medium potatoes
- 1/2 cup celery, diced
- 5 eggs, hard boiled
- 1/4 cup onion, diced
- salt and pepper
Recipe
- 1 cook potatoes with skin on and set aside to cool.
- 2 cut bacon into 1/2 inch strips. fry lightly, drain.
- 3 mix sugar and flour, add eggs and beat to smooth paste.
- 4 slowly stir in vinegar and water.
- 5 pour into pan with bacon and cook until thickened.
- 6 cool thoroughly; add salad dressing, stirring until well blended.
- 7 peel cold potatoes and dice them into a large bowl with the hard boiled eggs chopped, celery, and onion.
- 8 add dressing, mustard, salt and pepper to taste.
