Quinoa And Black Bean Salad

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1 1/2 teaspoons ground cumin
  • 1/2 teaspoon sea salt
  • 3 tablespoons olive oil
  • 2 teaspoons lime zest
  • 2 tablespoons lime juice
  • 1 teaspoon honey
  • 1 (14 ounce) can black beans, drained and rinsed
  • 2 cups chopped tomatoes
  • 1/2 cup thinly sliced green onion
  • 1/2 cup packed fresh cilantro leaves, chopped

Recipe

  • 1 cook quinoa in water. let cool.
  • 2 in small bowl, whisk together cumin, salt, oil, lime zest, lime juice and honey.
  • 3 in large bowl combine quinoa, beans, tomatoes, green onions and cilantro. add dressing and toss lightly to coat.
