Quinoa And Black Bean Salad

Ingredients
- Servings: 4
- 1 cup quinoa, rinsed
- 2 cups water
- 1 1/2 teaspoons ground cumin
- 1/2 teaspoon sea salt
- 3 tablespoons olive oil
- 2 teaspoons lime zest
- 2 tablespoons lime juice
- 1 teaspoon honey
- 1 (14 ounce) can black beans, drained and rinsed
- 2 cups chopped tomatoes
- 1/2 cup thinly sliced green onion
- 1/2 cup packed fresh cilantro leaves, chopped
Recipe
- 1 cook quinoa in water. let cool.
- 2 in small bowl, whisk together cumin, salt, oil, lime zest, lime juice and honey.
- 3 in large bowl combine quinoa, beans, tomatoes, green onions and cilantro. add dressing and toss lightly to coat.
