Sun-dried Tomato Dressing

Ingredients
- 1 small red pepper
- 2 plum tomatoes, coarsely chopped
- 1 small onion, chopped
- 3 tablespoons chopped fresh basil
- 2 garlic cloves, peeled
- 1/4 teaspoon dry crushed red pepper
- 1 (8 ounce) jar sun-dried tomatoes packed in oil, drained, cut into strips
- 3/4 cup water
- 1/4 cup whipping cream
- 1/4 cup red wine vinegar
- 3 tablespoons fresh lemon juice
- 1/3 cup vegetable oil
Recipe
- 1 char bell pepper over gas flame or in a broler until blackened all over.
- 2 enclose in a paper bag and let stand 10 minutes.
- 3 peel and seed; coarsely chop.
- 4 combine bell pepper and next 5 ingredients ina food processor.
- 5 blend until almost smooth.
- 6 transfer to a medium bowl.
- 7 mix sun dried tomatoes, 3/4 cup water, cream, vinegar and lemon juice in food processor.
- 8 with machine running, add oil; blend until almost smooth.
- 9 whisk sun dried tomato mixture into bell pepper mixture.
