Sun-dried Tomato Dressing

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 1 small red pepper
  • 2 plum tomatoes, coarsely chopped
  • 1 small onion, chopped
  • 3 tablespoons chopped fresh basil
  • 2 garlic cloves, peeled
  • 1/4 teaspoon dry crushed red pepper
  • 1 (8 ounce) jar sun-dried tomatoes packed in oil, drained, cut into strips
  • 3/4 cup water
  • 1/4 cup whipping cream
  • 1/4 cup red wine vinegar
  • 3 tablespoons fresh lemon juice
  • 1/3 cup vegetable oil

Recipe

  • 1 char bell pepper over gas flame or in a broler until blackened all over.
  • 2 enclose in a paper bag and let stand 10 minutes.
  • 3 peel and seed; coarsely chop.
  • 4 combine bell pepper and next 5 ingredients ina food processor.
  • 5 blend until almost smooth.
  • 6 transfer to a medium bowl.
  • 7 mix sun dried tomatoes, 3/4 cup water, cream, vinegar and lemon juice in food processor.
  • 8 with machine running, add oil; blend until almost smooth.
  • 9 whisk sun dried tomato mixture into bell pepper mixture.
