Ingredients

- 2 cups water
- 1 cup uncooked basmati rice
- 1 teaspoon salt, divided
- 1/4 cup wine vinegar
- 2 teaspoons grated orange rind
- 1/4 cup fresh orange juice
- 1 1/2 tablespoons extra virgin olive oil
- 1/4 teaspoon fresh ground black pepper
- 2 cups orange sections (about 3 oranges)
- 1/2 cup pomegranate seeds
- 1/4 cup pine nuts, toasted
- 3 tablespoons chopped fresh flat-leaf parsley
Recipe
- 1 bring the water to a boil in a medium saucepan over medium-high heat. add rice and 3/4 teaspoon salt; cover, reduce heat, and simmer 15 minutes or until liquid is absorbed.
