Summer Spinach Salad

Ingredients
- Servings: 6
- 1 bag spinach
- 1/2 cup almonds
- 2 cups sliced strawberries
- 2 egg yolks
- 1/2 cup sugar
- 3/4 cup oil
- 1/4 cup lemon juice
Recipe
- 1 wash spinach leaves.
- 2 pat dry.
- 3 transfer to salad bowl.
- 4 toast almonds in frying pan until brown.
- 5 in small bowl, whisk egg yolks, oil, lemon juice, and sugar together, until sugar dissolves.
- 6 just before serving, add strawberries, almonds, and egg yolk mixture to spinach, blending ingredients well.
