- 1 poblano pepper, diced small
- 1 cucumber, peeled, seeded and diced small
- 6 roma tomatoes, diced small
- 10 green onions, chopped
- 2 tablespoons fresh basil, julienned
- 2 lemons, juiced
- 1/4 cup extra virgin olive oil
- salt
- pepper
Recipe
- 1 mix all but salt and pepper in a bowl.
- 2 add salt and pepper to taste.
- 3 can make ahead of time.
