Spring Raspberry Salad

Ingredients

- 1/2 cup walnuts, coarsely chopped
- 2 tablespoons sugar
- 5 ounces mixed salad greens
- 12 ounces fresh raspberries (2 cups)
- 1/2 cup red onion, sliced thin (about 1/2 small onion)
- 1/2 cup dates, chopped
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon dijon mustard
- salt & freshly ground black pepper
- 2 ounces goat cheese, crumbled
Recipe
- 1 heat a small skillet over low heat and cook walnuts and sugar, stirring constantly, until sugar melts and walnuts are coated, about 10 minutes; let cool, break apart, and set aside.
- 2 meanwhile, in a large bowl, combine salad greens, fresh raspberries, onion, and dates.
- 3 whisk together olive oil, balsamic vinegar, dijon mustard, salt and pepper to taste.
- 4 just before serving pour dressing over salad and gently toss; garnish with cheese and walnuts.
