Salad Greens With Honey-mustard Dressing

Ingredients
- Servings: 4
- 1/4 cup honey
- 3 tablespoons dijon mustard
- 3 tablespoons extra virgin olive oil
- 1 tablespoon shallot, minced
- 1 tablespoon apple cider vinegar
- 1/2 lemon, juice of
- salt and pepper
- 8 cups mixed greens such as arugula or 8 cups radicchio or 8 cups curly endive lettuce or 8 cups romaine lettuce or 8 cups lettuce
- 1/2 cup red onion, thinly sliced
- 4 ounces mild goat cheese, crumbled
Recipe
- 1 for the dressing, combine all ingredients until blended.
- 2 toss dressing with greens, onion, and goat cheese (you won't need all the dressing).
- 3 serve with extra dressing on the side.
