Potato Salad

Total Time: 32 mins Preparation Time: 20 mins Cook Time: 12 mins

Ingredients

  • Servings: 6
  • 1 kg potato, peeled,cut into 2 cm cubes
  • 1 cup frozen peas, defrosted under hot water
  • 1 tablespoon oil
  • 1 medium onion, finely chopped
  • 3 slices bacon, diced
  • 4 hard-boiled eggs, peeled,chopped roughly
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream

Recipe

  • 1 bring a saucepan of salted water to the boil, add the potato cubes, and cook until tender, but not soft and mushy!
  • 2 this usually takes about 12 minutes after they return to the boil.
  • 3 after about 8 minutes, add the peas, and cook for a further 4 minutes.
  • 4 meanwhile, heat the oil in a frypan, and cook the onion and bacon for about 5 minutes.
  • 5 transfer to a bowl.
  • 6 add the cooked, drained potatoes and peas, the chopped eggs, and the sour cream and mayo.
  • 7 mix gently but thoroughly until combined.
  • 8 we prefer to eat this immediately, but you can cool and chill it.
  • 9 i also occasionally add chopped dill pickles and fresh dill.
