Romaine With Pickled Vegetable Salad

Ingredients

- 6 cups romaine lettuce, torn
- 1 (15 ounce) can cannellini beans, rinsed and drained
- 1/4 cup giardiniera, rinsed and drained
- 1/4 red onion, thinly sliced
- 1/3 cup olive oil
- 3 tablespoons fresh lemon juice
- 1 garlic clove, crushed
- 1/2 teaspoon kosher salt
- 1/4 teaspoon fresh ground black pepper
Recipe
- 1 toss lettuce with beans, giardiniera, and red onion.
- 2 whisk together dressing ingredients or place them in a lidded glass jar and give a good shake.
- 3 drizzle 4 tablespoons of the dressing over the salad and toss well.
