Romaine With Pickled Vegetable Salad

Ingredients

  • Servings: 4
  • 6 cups romaine lettuce, torn
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1/4 cup giardiniera, rinsed and drained
  • 1/4 red onion, thinly sliced
  • 1/3 cup olive oil
  • 3 tablespoons fresh lemon juice
  • 1 garlic clove, crushed
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon fresh ground black pepper

Recipe

  • 1 toss lettuce with beans, giardiniera, and red onion.
  • 2 whisk together dressing ingredients or place them in a lidded glass jar and give a good shake.
  • 3 drizzle 4 tablespoons of the dressing over the salad and toss well.
