Orange And Jicama Quinoa Salad

Ingredients

- 3 cups cooked quinoa
- 1 1/2 cups diced peeled jicama
- 1/2 cup packed fresh cilantro leaves, chopped
- 1/3 cup chopped red onion
- 1 (15 ounce) can mandarin oranges, drained and coarsely chopped
- 1 tablespoon minced seeded jalapeno pepper
- 3 tablespoons lime juice
- 2 tablespoons olive oil
- 1 tablespoon honey
- salt and pepper
Recipe
- 1 in a large bowl combine quinoa, jicama, cilantro, red onion and oranges.
- 2 in a small bowl, combine remaining ingredients. season to taste with salt and pepper. cover and refrigerate for at least 30 minutes before serving.
