Orange And Jicama Quinoa Salad

Ingredients

  • Servings: 4
  • 3 cups cooked quinoa
  • 1 1/2 cups diced peeled jicama
  • 1/2 cup packed fresh cilantro leaves, chopped
  • 1/3 cup chopped red onion
  • 1 (15 ounce) can mandarin oranges, drained and coarsely chopped
  • 1 tablespoon minced seeded jalapeno pepper
  • 3 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • salt and pepper

Recipe

  • 1 in a large bowl combine quinoa, jicama, cilantro, red onion and oranges.
  • 2 in a small bowl, combine remaining ingredients. season to taste with salt and pepper. cover and refrigerate for at least 30 minutes before serving.
