Salad With Sour Cream & Raspberry Dressing

Ingredients

  • Servings: 4
  • 1/2 small red leaf lettuce
  • 1/2 small iceberg lettuce
  • 1/2 cup arugula, chopped
  • 2 medium tomatoes, chopped
  • 2 large green onions, chopped small or 1/2 cup thinly sliced red onion
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 tablespoon honey mustard
  • 1 tablespoon raspberry vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon fresh ground black pepper

Recipe

  • 1 separate leaves of lettuce and arugula and wash with cold water.
  • 2 place in a bowl and cover with 2 trays of ice cubes.
  • 3 refrigerate for at least 1/2 hour to chill.
  • 4 when chilled, discard ice cubes, and drain.
  • 5 pat lettuce dry with paper towels.
  • 6 tear lettuce and arugula into smaller bite size pieces and place in a bowl.
  • 7 add tomatoes, green onions or use sliced red onion.
  • 8 add to bowl and lightly toss to mix.
  • 9 in a mixing bowl, whisk together mayonnaise, sour cream, honey mustard, raspberry vinegar, salt and pepper.
  • 10 pour dressing over lettuce and toss to coat.
