Salad With Sour Cream & Raspberry Dressing

Ingredients

- 1/2 small red leaf lettuce
- 1/2 small iceberg lettuce
- 1/2 cup arugula, chopped
- 2 medium tomatoes, chopped
- 2 large green onions, chopped small or 1/2 cup thinly sliced red onion
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 tablespoon honey mustard
- 1 tablespoon raspberry vinegar
- 1/4 teaspoon salt
- 1/8 teaspoon fresh ground black pepper
Recipe
- 1 separate leaves of lettuce and arugula and wash with cold water.
- 2 place in a bowl and cover with 2 trays of ice cubes.
- 3 refrigerate for at least 1/2 hour to chill.
- 4 when chilled, discard ice cubes, and drain.
- 5 pat lettuce dry with paper towels.
- 6 tear lettuce and arugula into smaller bite size pieces and place in a bowl.
- 7 add tomatoes, green onions or use sliced red onion.
- 8 add to bowl and lightly toss to mix.
- 9 in a mixing bowl, whisk together mayonnaise, sour cream, honey mustard, raspberry vinegar, salt and pepper.
- 10 pour dressing over lettuce and toss to coat.
