Raisin Carrot Salad

Ingredients

- 8 ounces crushed pineapple
- 1 tablespoon cornstarch
- 1/4 teaspoon dry mustard
- 2 tablespoons cider vinegar
- 2 tablespoons mayonnaise
- 2 cups shredded carrots
- 1/2 cup raisins
Recipe
- 1 in a medium pan, combine pineapple, cornstarch, mustard and salt.
- 2 cook over medium heat till mixture boils and thickens --
- 3 remove from heat and stir in vinegar, and refrigerate till well chilled --
- 4 gently stir in mayonnaise and carrots and raisins in a bowl --
- 5 add the pineapple mixture and stir to combine.
- 6 spoon into lettuce cups and serve on individual salad plates.
