Quick Spinach Salad With Sprouts
Ingredients

- 1 lb spinach
- 2 tablespoons water
- 1/2 cup alfalfa sprout
- 1 clove garlic, minced
- 1/4 cup feta cheese, crumbled
- 1 teaspoon dijon mustard
- 2 tablespoons sunflower seeds
- salt
- 2 tablespoons olive oil
- black pepper, freshly ground
- 2 tablespoons lemon juice
Recipe
- 1 cubed skim-milk mozzarella cheese can be used instead of crumbled feta cheese.
- 2 rice vinegar, cider vinegar or balsamic vinegar can be used instead of lemon juice.
- 3 trim, wash and dry spinach.
- 4 tear into bite-sized pieces to make about 10 cups, lightly packed.
- 5 place in salad bowl.
