Quinoa And Black Bean Salad

Ingredients

  • Servings: 4
  • 3 cups cooked quinoa
  • 2 cups chopped tomatoes
  • 1/2 cup thinly sliced green onion
  • 1/2 cup packed cilantro leaf, chopped
  • 1 2/3 cups canned black beans, drained and rinsed
  • 2 teaspoons ground cumin
  • 3 tablespoons olive oil
  • 2 teaspoons grated lime zest
  • 2 tablespoons fresh lime juice
  • 1 teaspoon honey
  • salt and pepper

Recipe

  • 1 in a large bowl combine quinoa, tomatoes, green onions, cilantro and beans.
