Ingredients
- 1 beet, trimmed and scrubbed
- 1/2 peach, pitted and chopped
- 1 teaspoon red wine vinegar
Recipe
- 1 put beet in microwave safe dish (cover with several layers of paper towel) and microwave on high for 8-10 minutes.
- 2 let cool and rub off skin; slice into about 15 pieces.
- 3 toss beets with peach.
- 4 drizzle vinegar overtop.
- 5 enjoy!
