Roasted Beet Salad

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 1 beet, trimmed and scrubbed
  • 1/2 peach, pitted and chopped
  • 1 teaspoon red wine vinegar

Recipe

  • 1 put beet in microwave safe dish (cover with several layers of paper towel) and microwave on high for 8-10 minutes.
  • 2 let cool and rub off skin; slice into about 15 pieces.
  • 3 toss beets with peach.
  • 4 drizzle vinegar overtop.
  • 5 enjoy!
