herbed chickpea salad

Ingredients

  • Servings: 4
  • 1 (15 ounce) can garbanzo beans (chickpeas), drained and rinsed
  • 1/4 cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons lemon juice
  • 4 teaspoons extra-virgin olive oil
  • 1 clove garlic, minced

  • mix garbanzo beans, parmesan cheese, parsley, basil, lemon juice, olive oil, and garlic together in a bowl; chill in refrigerator for flavors to blend, 1 to 2 hours.
