Salsa Salad - Rachel Ray - Ww 2 Pts.

Ingredients
- 1 cup sliced pineapple, fresh
- 1 bell pepper, chopped
- 1 cup red onion, chopped
- 4 plum tomatoes, quartered
- 2 tablespoons fresh lime juice
- 2 tablespoons cilantro
- 1 tablespoon extra virgin olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
Recipe
- 1 heat a grill pan (or skillet) over medium high heat.
- 2 grill pineapple slices for 5 minutes, turning once.
- 3 while pineapple grills, chop bell pepper (i used orange but you could use any color pepper you want) and onion and quarter tomatoes. place in a large bowl.
- 4 chop grilled pineapple and place in bowl with other ingredients.
- 5 chop cilantro and add to bowl.
- 6 drizzle with evoo. add salt and pepper.
- 7 mix and serve.
