Salsa Salad - Rachel Ray - Ww 2 Pts.

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • 1 cup sliced pineapple, fresh
  • 1 bell pepper, chopped
  • 1 cup red onion, chopped
  • 4 plum tomatoes, quartered
  • 2 tablespoons fresh lime juice
  • 2 tablespoons cilantro
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper

Recipe

  • 1 heat a grill pan (or skillet) over medium high heat.
  • 2 grill pineapple slices for 5 minutes, turning once.
  • 3 while pineapple grills, chop bell pepper (i used orange but you could use any color pepper you want) and onion and quarter tomatoes. place in a large bowl.
  • 4 chop grilled pineapple and place in bowl with other ingredients.
  • 5 chop cilantro and add to bowl.
  • 6 drizzle with evoo. add salt and pepper.
  • 7 mix and serve.
