Mom’s Red Potato Salad

Total Time: 1 hr Preparation Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 6 -8 red potatoes
  • 4 -6 eggs
  • 1 bunch scallion
  • 1 medium onion
  • 1/2 green pepper
  • mayonnaise
  • prepared mustard
  • celery salt

Recipe

  • 1 boil potatoes and eggs.
  • 2 cool enough to handle.
  • 3 peel eggs and chop.
  • 4 cube potatoes with or without skins. i prefer the skins on it adds color and texture.
  • 5 add sliced scallions, minced green pepper and minced onion.
  • 6 gently mix together.
  • 7 add mayonnaise and mustard approximately 1 scoop of mayonnaise with 1 teaspoons of mustard. {use as much mayo and mustard as you like}
  • 8 then add celery salt to taste.
  • 9 serve warm, this is where you get the flavor.
