Midsummer Artichoke Salad

Ingredients

  • Servings: 6
  • 3 cups lettuce, torn
  • 2 cups fresh mushrooms, halved
  • 1 cup mozzarella cheese, cubed
  • 2 (6 ounce) jars marinated artichoke hearts, reserve marinade
  • 2 medium tomatoes, cut into wedges
  • 2 tablespoons parmesan cheese, freshly grated
  • 1/4 teaspoon ground pepper

Recipe

  • 1 in large bowl stir together all ingredients. toss to coat with reserved artichoke marinade.
  • 2 serve.
