Strawberry-orange Salad

Ingredients

- 1 egg
- 1/4 cup sugar
- 1 cup sliced almonds
- 2 tablespoons butter
- 1 bunch red leaf lettuce, torn
- 1 (11 ounce) can mandarin oranges, drained
- 1 quart strawberry, thinly sliced
- 1 green onion, sliced
- 1/4 cup vegetable oil
- 2 tablespoons raspberry vinegar
- 2 teaspoons honey
- 1/2 teaspoon orange zest
- 1/8 teaspoon salt
Recipe
- 1 beat egg on high with a mixer until foamy. add sugar a little at a time, beating 2 to 3 minutes until stiff peaks form and sugar dissolves. fold in almonds.
- 2 melt butter in a small pan or pie plate in a 325 degree oven. add almonds to pan, and bake, stirring every 5 minutes, 30 - 35 minutes or until lightly browned and dry. cool in pan on a wire rack.
- 3 toss lettuce and next three ingredients in a large bowl.
- 4 whisk together oil and next four ingredients; drizzle over salad (use as little or as much as you like) and toss gently. sprinkle with sugared almonds and serve.
