Peach Frost Salad

Ingredients

  • Servings: 8
  • 3 ounces cream cheese, softened
  • 1/2 cup heavy cream
  • 1/4 cup mayonnaise
  • 1 -2 tablespoon lemon juice (depending on sweetness of peaches)
  • 1 dash salt
  • 3 cups sliced fresh peaches or 30 ounces sliced peaches, drained
  • 3/4 cup coarsely chopped pecans
  • lettuce leaf
  • sour cream or mayonnaise, garnish

Recipe

  • 1 in a mixing bowl, beat cream cheese and heavy cream until mixture is light and fluffy. stir in mayonnaise, lemon juice and salt. gently fold in peach slices and pecans. pour into a 9x9x2-inch glass dish. freeze several hours.
  • 2 remove from freezer 15 minutes before serving. cut into squares; place each square in center of lettuce leaf on salad plate. top each with a dollop of sour cream or mayonnaise.
