Rhubarb Salad

Ingredients

  • Servings: 4
  • 3 cups diced fresh rhubarb
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 (3 ounce) packages strawberry jell-o gelatin dessert
  • 2 cups cold water
  • 2 cups finely diced celery
  • 1/4 cup lemon juice

Recipe

  • 1 combine rhubarb, sugar and salt in a sauce pan.
  • 2 cook over how heat until rhubarb is tender.
  • 3 do not stir or add water as it makes it's own juice.
  • 4 bring mixture quickly to a boil.
  • 5 immediately remove from heat; add jello and the remaining ingredients.
  • 6 pour into a mold and chill until firm.
  • 7 (recipe may be halved).
