Rhubarb Salad
Ingredients
- Servings: 4
- 3 cups diced fresh rhubarb
- 1/2 cup sugar
- 1/4 teaspoon salt
- 2 (3 ounce) packages strawberry jell-o gelatin dessert
- 2 cups cold water
- 2 cups finely diced celery
- 1/4 cup lemon juice
Recipe
- 1 combine rhubarb, sugar and salt in a sauce pan.
- 2 cook over how heat until rhubarb is tender.
- 3 do not stir or add water as it makes it's own juice.
- 4 bring mixture quickly to a boil.
- 5 immediately remove from heat; add jello and the remaining ingredients.
- 6 pour into a mold and chill until firm.
- 7 (recipe may be halved).
