Russian Garlic Salad

Ingredients
- 30 garlic cloves, cleaned and peeled
- 1/2 cup olive oil
- 1/4 cup lemon juice
- 4 tablespoons wine vinegar
- salt and pepper, to taste
- 1/2 teaspoon oregano (optional)
Recipe
- 1 blanch the whole cloves of garlic in boiling water for 5 minutes.
- 2 remove and plunge into cold water.
- 3 drain.
- 4 mix with the remaining ingredients.
- 5 allow to marinate for 5 days in the refrigerator before serving.
- 6 the salad is served as it is, in small bowls alongside the main plate.
- 7 or you may chop this up and add it to a layered green salad.
