Ingredients

- 2 hardboiled egg, peeled
- 2 tablespoons low-fat mayonnaise
- pepper, to taste
- paprika, to taste
- snipped parsley, to garnish
- butter, softened
- 2 slices bread, toasted
Recipe
- 1 place hardboiled eggs into a small bowl; add mayonnaise.
- 2 use a fork to smash egg and combine with the mayonnaise.
- 3 season with pepper and paprika, to taste.
- 4 garnish with snipped parsley or your favorite herb.
- 5 butter the toasted bread, and spoon on the egg filling to make a sandwich.
