Super-slim Tuna Salad

Ingredients

  • Servings: 4
  • 2 (6 1/2 ounce) cans tuna in water
  • 2/3 cup low-fat small-curd cottage cheese
  • 2 tablespoons snipped fresh chives
  • 1 pinch red pepper flakes
  • 1/4-3/8 teaspoon fresh ground black pepper
  • 4 plum tomatoes, seeded
  • 1 small cucumber, peeled, halved lengthwise, and seeded
  • 1/2 cup sliced scallion, and green parts
  • salt

Recipe

  • 1 place drained tuna in a medium sized bowl; add the cottage cheese, chives, pepper flakes, and black pepper. mix well, but leave some of the tuna chunky.
  • 2 cut the tomatoes into 1/3-inch dice. cut the cucumber into quarters lengthwise and then slice crosswise into pieces 1/4-inch thick. add the tomatoes, cucumbers, and scallions to the tuna mixture and toss to combine well. taste for seasoning, add salt if necessary.
