Super-slim Tuna Salad

Ingredients

- 2 (6 1/2 ounce) cans tuna in water
- 2/3 cup low-fat small-curd cottage cheese
- 2 tablespoons snipped fresh chives
- 1 pinch red pepper flakes
- 1/4-3/8 teaspoon fresh ground black pepper
- 4 plum tomatoes, seeded
- 1 small cucumber, peeled, halved lengthwise, and seeded
- 1/2 cup sliced scallion, and green parts
- salt
Recipe
- 1 place drained tuna in a medium sized bowl; add the cottage cheese, chives, pepper flakes, and black pepper. mix well, but leave some of the tuna chunky.
- 2 cut the tomatoes into 1/3-inch dice. cut the cucumber into quarters lengthwise and then slice crosswise into pieces 1/4-inch thick. add the tomatoes, cucumbers, and scallions to the tuna mixture and toss to combine well. taste for seasoning, add salt if necessary.
