Radish And Cucumber Salad

Ingredients

  • Servings: 6
  • 2 bunches red radishes, trimmed and sliced thin (about 20 radish)
  • 1 english cucumber, peeled and sliced thin (halve slices if large)
  • 1/2 large sweet onion, peeled and sliced thin
  • 1 green bell pepper, seeded and cut into thin strips
  • 1 1/2 cups fresh cilantro leaves or 1 1/2 cups flat leaf parsley, coarsely chopped
  • 1 tablespoon fresh ginger, grated
  • 1/2-3/4 cup rice wine vinegar
  • salt and pepper

Recipe

  • 1 chill vegetables before preparing. if possible. place prepared radishes, cucumber, onion, and green pepper, in a large bowl. toss well., cover and refrigerate while chopping cilantro and grating ginger.
  • 2 drizzle rice wine vinegar over vegetables, sprinkling cilantro and ginger on top and toss thoroughly to combine.
  • 3 serve chilled.
