Pesto Potato Salad

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 3
  • 6 medium potatoes, peeled
  • 1/2 cup mayonnaise
  • 3 tablespoons pesto sauce
  • 1/4 cup pine nuts, toasted
  • 1 cup fresh basil leaf, chopped
  • shaved parmesan cheese, garnish

Recipe

  • 1 cook potatoes in boiling salted water until just tender, drain & cut into cubes and allow to cool.
  • 2 mix the mayo & pesto & carefully spoon through the potatoes, when fully cool, mix through pinenuts & basil and garnish with parmesan cheese.
