Octoberfest German Potato Salad

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 3 lbs potatoes, peeled and sliced
  • 1/2 cup chopped onion
  • 2 teaspoons salt
  • 1/2 cup mayonnaise
  • 1/4 cup vegetable oil
  • 1/2 cup cider vinegar
  • 2 tablespoons sugar
  • 2 tablespoons dried parsley
  • ground black pepper

Recipe

  • 1 bring a large pot of salted water to a boil.
  • 2 add peeled and cut potatoes; cook until tender but still firm, about 15 minutes.
  • 3 drain, and transfer to a large bowl.
  • 4 add onions.
  • 5 in a large bowl, whisk togther the mayonnaise, oil, vinegar, sugar, parsley, salt and pepper.
  • 6 gently stir in the potatoes and onion.
  • 7 let stand for 1 hour before serving to enhance flavors.
