Smashed Potato Salad

Ingredients

- 2 lbs small potatoes
- 1 bunch scallion, sliced thinly on the bias
- 1 red onion, diced
- 3/4-1 cup mayonnaise
- 2 tablespoons cider vinegar
- salt
- fresh ground pepper
Recipe
- 1 in a saucepan cover the potatoes with water.
- 2 bring to a boil and cook until potatoes are tender.
- 3 drain and place in a mixing bowl.
- 4 smash the potatoes with a potato masher.
- 5 add scallions, red onion, mayo and cider vinegar.
- 6 season to taste with salt and vinegar.
- 7 this is best served warm or at room temperature.
