Smashed Potato Salad

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 lbs small potatoes
  • 1 bunch scallion, sliced thinly on the bias
  • 1 red onion, diced
  • 3/4-1 cup mayonnaise
  • 2 tablespoons cider vinegar
  • salt
  • fresh ground pepper

Recipe

  • 1 in a saucepan cover the potatoes with water.
  • 2 bring to a boil and cook until potatoes are tender.
  • 3 drain and place in a mixing bowl.
  • 4 smash the potatoes with a potato masher.
  • 5 add scallions, red onion, mayo and cider vinegar.
  • 6 season to taste with salt and vinegar.
  • 7 this is best served warm or at room temperature.
