Smoked Salmon And Chive Pasta

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 500 g pasta, of choice
  • 2 tablespoons olive oil
  • 1 tablespoon capers (optional)
  • 1 (300 ml) carton cream
  • 1 lemon, juice of
  • 2 teaspoons dijon mustard
  • 100 g smoked salmon, sliced
  • 1/2 bunch chives, snipped
  • 1/4 cup grated parmesan cheese

Recipe

  • 1 cook pasta in plenty of boiling water.
  • 2 heat oil in frying pan.
  • 3 add capers.
  • 4 fry for 1 minute or until capers burst.
  • 5 stir in cream.
  • 6 bring to boil.
  • 7 blend in juice and mustard.
  • 8 reduce heat.
  • 9 simmer until cream mix has thickened and the mix through salmon and chives.
  • 10 simmer, stirring for 1- 2 minutes.
  • 11 toss through drained pasta and parmesan.
  • 12 heat, stirring lightly for 2 minutes.
  • 13 serve with salad.
