Smoked Salmon And Chive Pasta

Ingredients
- Servings: 4
- 500 g pasta, of choice
- 2 tablespoons olive oil
- 1 tablespoon capers (optional)
- 1 (300 ml) carton cream
- 1 lemon, juice of
- 2 teaspoons dijon mustard
- 100 g smoked salmon, sliced
- 1/2 bunch chives, snipped
- 1/4 cup grated parmesan cheese
Recipe
- 1 cook pasta in plenty of boiling water.
- 2 heat oil in frying pan.
- 3 add capers.
- 4 fry for 1 minute or until capers burst.
- 5 stir in cream.
- 6 bring to boil.
- 7 blend in juice and mustard.
- 8 reduce heat.
- 9 simmer until cream mix has thickened and the mix through salmon and chives.
- 10 simmer, stirring for 1- 2 minutes.
- 11 toss through drained pasta and parmesan.
- 12 heat, stirring lightly for 2 minutes.
- 13 serve with salad.
