Peach-glazed Tofu

Total Time: 2 hrs Preparation Time: 1 hr 10 mins Cook Time: 50 mins

Ingredients

  • Servings: 4
  • 1 lb tofu (medium or firm)
  • 1/4 cup sweet and spicy light french salad dressing, plus
  • 2 tablespoons sweet and spicy light french salad dressing
  • 3 tablespoons peach jam
  • 3 tablespoons onions, very finely chopped

Recipe

  • 1 cut tofu into slices 1 inch thick.
  • 2 place slices between 2 baking sheets.
  • 3 top them with something heavy, such as 8 1-lb cans of food or a pile of cookbooks, propping up one end so the water can drain into the lower end of the pan.

  • 6 lightly spray a 6x10-inch shallow baking pan with nonstick cooking spray.
  • 7 cut pressed tofu into 1-inch cubes.

  • 11 bake, uncovered, 45 minutes.
  • 12 place pan under broiler and broil 2 to 3 minutes, until crisp and bubbly.
