Mexican Corn Salad

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • 1 (16 ounce) package frozen corn, thawed
  • 1/2 cup finely chopped fresh cilantro
  • 1/2 cup finely chopped red onion
  • 1/4 cup fresh lime juice
  • 2 tablespoons minced and seeded jalapenos (about 1 large)
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon black pepper
  • 2 garlic cloves, minced

Recipe

  • 1 combine all ingredients in a bowl and toss well.
  • 2 cover and chill approximately 8 hours.
  • 3 stir well before serving.
