Mexican Corn Salad

Ingredients
- 1 (16 ounce) package frozen corn, thawed
- 1/2 cup finely chopped fresh cilantro
- 1/2 cup finely chopped red onion
- 1/4 cup fresh lime juice
- 2 tablespoons minced and seeded jalapenos (about 1 large)
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon cumin
- 1/4 teaspoon chili powder
- 1/4 teaspoon black pepper
- 2 garlic cloves, minced
Recipe
- 1 combine all ingredients in a bowl and toss well.
- 2 cover and chill approximately 8 hours.
- 3 stir well before serving.
