Potato Salad 4-1

Ingredients

  • Servings: 1
  • 4 ounces new potatoes, unpeeled
  • 1/4 cup mayonnaise
  • 1 tablespoon green bell pepper, chopped
  • 1/8 teaspoon salt
  • 1 dash pepper
  • 1 dash cinnamon
  • 1 dash nutmeg

Recipe

  • 1 choose new potatoes that are uniform in size.
  • 2 wash potatoes.
  • 3 place potatoes in a 1-pint microwave-safe container.
  • 4 cover with lid.
  • 5 in a microwave oven, cook for 2 minutes (in a 700-watt oven).
  • 6 adjust to the wattage of your microwave.
  • 7 cool potatoes enough to handle.
  • 8 peel potatoes then dice.
  • 9 place diced potatoes in a small bowl.
  • 10 mix mayonnaise, green bell pepper, salt, pepper, cinnamon and nutmeg.
  • 11 add to potatoes then mix gently.
  • 12 chill before serving.
  • 13 store potato salad leftovers in the refrigerator.
