- 4 ounces new potatoes, unpeeled
- 1/4 cup mayonnaise
- 1 tablespoon green bell pepper, chopped
- 1/8 teaspoon salt
- 1 dash pepper
- 1 dash cinnamon
- 1 dash nutmeg
Recipe
- 1 choose new potatoes that are uniform in size.
- 2 wash potatoes.
- 3 place potatoes in a 1-pint microwave-safe container.
- 4 cover with lid.
- 5 in a microwave oven, cook for 2 minutes (in a 700-watt oven).
- 6 adjust to the wattage of your microwave.
- 7 cool potatoes enough to handle.
- 8 peel potatoes then dice.
- 9 place diced potatoes in a small bowl.
- 10 mix mayonnaise, green bell pepper, salt, pepper, cinnamon and nutmeg.
- 11 add to potatoes then mix gently.
- 12 chill before serving.
- 13 store potato salad leftovers in the refrigerator.
