Potato Salad With Avocado Dressing

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 avocado
  • 8 ounces tiny new potatoes
  • 4 ounces green beans
  • 2 ounces creme fraiche
  • 1 teaspoon olive oil
  • 1 lemon
  • 2 scallions, finely chopped
  • salt & pepper

Recipe

  • 1 cook the new potatoes and green beans until tender, drain both and set aside.
  • 2 puree flesh of the avocado with the crème fraîche and then add the olive oil, lemon juice and salt and black pepper.
  • 3 stir in potatoes, beans and the finely chopped scallions.
  • 4 toss gently.
