Quinoa & Chickpea Salad

Total Time: 45 mins Preparation Time: 30 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 1/2 cup quinoa
  • 1 cup water
  • 1 1/2 cups chickpeas
  • 1/4 cup feta cheese
  • 1/4 cup black olives (optional)
  • 1/4 cup cherry tomatoes or 1/4 cup grape tomatoes
  • 1/4 cup small onion or 1/4 cup green onion
  • 1/4 cup yellow pepper
  • 1/4 cup red pepper
  • 1/4 cup sunflower seeds
  • 1 cup salad greens or 1 cup spinach
  • 1 -2 garlic clove, chopped
  • 1 tablespoon dijon mustard
  • 1 tablespoon brown sugar
  • 1/4 cup balsamic vinegar
  • 1/2 cup olive oil

Recipe

  • 1 boil water, add quinoa, cover and simmer x15 min or till h2o absorbed. let cool.
  • 2 mix together all remaining ingredients except salad greens.toss.
  • 3 mix together dressing ingredients.add greens and pour dressing over just before serving.
