Quinoa & Chickpea Salad

Ingredients
- Servings: 6
- 1/2 cup quinoa
- 1 cup water
- 1 1/2 cups chickpeas
- 1/4 cup feta cheese
- 1/4 cup black olives (optional)
- 1/4 cup cherry tomatoes or 1/4 cup grape tomatoes
- 1/4 cup small onion or 1/4 cup green onion
- 1/4 cup yellow pepper
- 1/4 cup red pepper
- 1/4 cup sunflower seeds
- 1 cup salad greens or 1 cup spinach
- 1 -2 garlic clove, chopped
- 1 tablespoon dijon mustard
- 1 tablespoon brown sugar
- 1/4 cup balsamic vinegar
- 1/2 cup olive oil
Recipe
- 1 boil water, add quinoa, cover and simmer x15 min or till h2o absorbed. let cool.
- 2 mix together all remaining ingredients except salad greens.toss.
- 3 mix together dressing ingredients.add greens and pour dressing over just before serving.
