Smoky Waldorf Salad

Ingredients

  • Servings: 4
  • 2 medium apples, cored and diced
  • 1 medium pear, cored and diced
  • 2 tablespoons lemon juice
  • 1 cup diced celery
  • 1/3 cup chopped red onion
  • 1/2 cup pecans, coarsely chopped
  • 4 -6 ounces smoked gouda cheese, rind removed and cut into cubes
  • 1 teaspoon dijon mustard
  • 1 teaspoon sugar
  • 1/4 teaspoon coarse black pepper
  • 1/2 cup mayonnaise, amount to taste
  • salt, to taste
  • baby spinach, to serve

Recipe

  • 1 in a large bowl, toss the diced apples and pears in the lemon juice.
  • 2 add the celery, onion, pecans, and smoked gouda.
  • 3 stir together the dijon mustard, sugar, black pepper and mayonnaise. gently fold into the salad and mix well. add salt, if needed, to taste.
  • 4 chill until ready to serve.
  • 5 serve on a bed of baby spinach or other greens.
