Smoky Waldorf Salad

Ingredients

- 2 medium apples, cored and diced
- 1 medium pear, cored and diced
- 2 tablespoons lemon juice
- 1 cup diced celery
- 1/3 cup chopped red onion
- 1/2 cup pecans, coarsely chopped
- 4 -6 ounces smoked gouda cheese, rind removed and cut into cubes
- 1 teaspoon dijon mustard
- 1 teaspoon sugar
- 1/4 teaspoon coarse black pepper
- 1/2 cup mayonnaise, amount to taste
- salt, to taste
- baby spinach, to serve
Recipe
- 1 in a large bowl, toss the diced apples and pears in the lemon juice.
- 2 add the celery, onion, pecans, and smoked gouda.
- 3 stir together the dijon mustard, sugar, black pepper and mayonnaise. gently fold into the salad and mix well. add salt, if needed, to taste.
- 4 chill until ready to serve.
- 5 serve on a bed of baby spinach or other greens.
