Roasted Vegetables

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • 6 small red salad potatoes, chopped in 1/4-inch pieces
  • 1/2 red onion, chopped in 1/4-inch pieces
  • 1 yellow bell pepper, chopped in 1/4-inch pieces
  • 2 teaspoons garlic, minced
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/2 teaspoon sage
  • 1/2 teaspoon thyme
  • 1/2 teaspoon rosemary

Recipe

  • 1 pre-heat oven to 425 f degrees.
  • 2 toss all ingredients in a 2-quart pyrex-type dish.
  • 3 cook for 30 minutes, stirring once or twice.
