Melted Brie On Baguette With Arugula Salad

Ingredients

  • Servings: 4
  • 12 slices baguette
  • 14 ounces brie cheese, cut in 12 slices
  • 2 tablespoons olive oil
  • black pepper
  • 3 ounces arugula
  • 1/3 cup olive oil
  • 5 teaspoons balsamic vinegar
  • salt and pepper
  • 1 teaspoon fresh chives

Recipe

  • 1 place baguette slices on a baking sheet and lightly toast under the broiler.
  • 2 place brie on top of baguette slices. drizzle with olive oil, sprinkle with a little pepper. broil until cheese is slightly melted.
  • 3 arugula salad: in a bowl, combine arugula, oil, vinegar, salt and pepper to taste. sprinkle with chives.
  • 4 serve baguettes while warm, accompanied with a small portion of arugula salad.
