Ingredients

- 3 medium potatoes, scrubbed clean
- 1/2 cup fat-free mayonnaise
- 2 teaspoons chives, chopped
- 2 teaspoons fresh parsley, chopped
- 1 tablespoon extra virgin olive oil
- 1 tablespoon lemon juice
Recipe
- 1 boil potatoes until tender. drain and cool.
- 2 roughly chop potatoes into chunks.
- 3 place potatoes in a bowl with all other ingredients, and stir gently until well combined.
- 4 season with salt and pepper if desired.
