Potato Salad

Total Time: 1 hr Preparation Time: 1 hr

Ingredients

  • Servings: 4
  • 4 large potatoes
  • 4 medium eggs, hard-boiled, separated
  • 1/2 teaspoon salt, divided
  • 1 medium onion, diced
  • 1/2 cup mayonnaise
  • 1 tablespoon sweet pickle relish
  • 1/2 tablespoon prepared mustard
  • 1/4 teaspoon pepper
  • 1/4 teaspoon celery seed

Recipe

  • 1 cook potatoes in boiling water to cover 40 minutes or until tender; drain and cool. peel potatoes and cut into 1 inch pieces.
  • 2 chop egg whites. in a large bowl, stir together potato, egg whites, 1/8 teaspoon of salt and green onions.
  • 3 using a fork, mash the yolks in a small bowl, add in remaining 1/8 teaspoon salt, mayo,pickle relish, mustard, pepper, and celery seed, stirring until well blended.
  • 4 gently stir yolk mixture into potato mixture, adjust seasoning to taste with salt and pepper.
  • 5 cover and chill 2 hours (it's even better if you chill this overnight).
