Potato Salad

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 5 lbs small red potatoes
  • 12 eggs, boiled and chopped
  • 1 lb bacon, fried and crumbled
  • 2 bunches green onions, chopped
  • 1 1/2 cups mayonnaise, adjust to taste

Recipe

  • 1 boil potatoes until just done but not mushy, allow to cool and then cut into smaller pieces if necessary.
  • 2 mix potatoes with chopped boiled eggs, crumbled bacon, chopped green onions, then stir in mayonnaise to desired consistency.
  • 3 season to taste with salt and pepper.
