Ingredients
- Servings: 8
- 5 lbs small red potatoes
- 12 eggs, boiled and chopped
- 1 lb bacon, fried and crumbled
- 2 bunches green onions, chopped
- 1 1/2 cups mayonnaise, adjust to taste
Recipe
- 1 boil potatoes until just done but not mushy, allow to cool and then cut into smaller pieces if necessary.
- 2 mix potatoes with chopped boiled eggs, crumbled bacon, chopped green onions, then stir in mayonnaise to desired consistency.
- 3 season to taste with salt and pepper.
