Simple Potato Salad (that'll Keep 'em Coming Back For More)

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 large idaho potato
  • 4 eggs
  • 1/3 cup onion, finely chopped
  • 8 ounces mayonnaise (i use the smallest available jar of hellman's real mayo, but can put in as much as you like to taste)
  • salt (to taste, i usually don't add salt, as this is a recipe that salt can easily be added by the guests )

Recipe

  • 1 boil the potato, skin on.
  • 2 boil eggs until hard.
  • 3 while eggs and potato are boiling dice onion.
  • 4 once eggs are cooked, peel and chop.
  • 5 once potato is cooked (but not mushy) peel and chop. (skin will begin to peel away once it is cooked. remove potato from pot and place in ice cold water for a few minutes. skin will now be easy to remove from potato).
  • 6 mix eggs, potato, onion, and mayonnaise to taste and serve!
